Jamie-Lee began working at Sanctuary Cove Golf and Country Club in November 2015. Jamie moved to the Gold Coast from Melbourne to continue her culinary adventure with her partner and son. She loves to travel and shop in her spare time and is now assisting the Food and Beverage team as one of our Sous Chefs, with further improvements to Members On- Course, Golf Shop and Drinks Cart food. Jamie is also now enjoying early mornings in Lakeview Bar each Sunday to create beautiful breakfast meals for our Members and their guests.
How did you first get involved in the food and beverage industry?
When I was 15 years old I started working at McDonalds, both after school and on
the weekends. I have been in the industry ever since.
What inspired you to apply to work at SCGCC?
I had moved from Melbourne to the Gold Coast and had previously worked at a golf club.
What do you wish other people knew about SCGCC?
That the staff all work hard.
Who has been the most influential person you’ve met in the industry?
What might someone be surprised to know about you?
I enjoy travelling and shopping.
How would someone describe you in three words?
Colourful, loud and happy.
What do you do when you aren’t working at SCGCC?
Spend time with my family.
What are your hobbies?
Shopping, travelling, being outdoors and going to the beach.
What’s your favourite type of cuisine?
What is your signature dish?
Strawberry Eton Mess.
What’s your number one cooking tip?
When slicing avocados for salads or guacamole, split them in half, remove the pit by whacking it with the heel of your knife and twisting it out, then slice it directly in the skin using the tip of a paring knife or chef’s knife. When you then scoop it out with a spoon, you’ll have slices ready to go, with less mess than trying to fiddle with
slippery peeled avocado on a cutting board.
What’s the most exotic place you’ve travelled to?
Which sports team do you follow?
St Kilda (AFL).
What’s your biggest pet peeve?
People not cleaning up after themselves.
Do you play a musical instrument?
What’s the strangest talent you have?
I don’t have any.

What’s one professional or personal skill you wish you had that you don’t (yet)?
Being able to sing.
