With the recent success of the past two working bees The Match and Greens Committee of Sanctuary Cove Golf and Country Club have organised another working bee for Members on Tuesday 18 July.

The working bee will focus on clearing up any sticks or branches in the pine trees so that we can begin cleaning up the pine cones with our machine.

Members will be walking The Pines golf course while completing the above tasks.  At the completion of the working bee, there will be complimentary beverages and snacks available to Members that participated in Lakeview Bar.

The Club continues to proudly host Nine and Dine events on Thursday afternoons. This format has continued to grow over the past two years and further advancements will make these afternoon events even better. Nine and Dine now has a full schedule for 2017 and will feature different themed dining for each event. This is a pleasant mix of golf and food, allowing Members and their guests to play a fun golf competition and enjoy a meal in Arnie’s Cafe and Bar with fellow Members and guests after their round.

Join us for the next Nine and Dine afternoon, commencing with golf at 2:30pm in a shotgun start format. Following 9 holes of golf, enjoy an Australian Barbecue menu in Arnie’s Café and Bar for $15 per person which includes your competition fee.  Members are invited to bring a guest for just $50 per person.

The next event will be held on Thursday 3 August. Golf will be played as a 4-Person Ambrose.

The next Social Sunday Golf event will be played on The Pines golf course on Sunday 16 July in a 12pm shotgun start. The day will be in an American Foursomes format, an enjoyable two-person team event, for which bookings are now available via the online tee sheet.

Following golf enjoy Sunday’s traditional roast casual dining menu in Lakeview Bar, as well as the Weekly Members’ Draw.

The Club has created a feast using the freshest produce and mixed with the culinary talents of the entire kitchen team, you and your guests will be amazed at this array of delectable foods.

Lakeview Bar will be transformed into an elegant yet relaxed atmosphere where you will sit at the long tables filled with an abundance of food to be shared. Your wait staff will be replenishing your tables with menu items as the afternoon ‘lunches’ on. This is designed to be enjoyed over a long lunch setting.

On Sunday 2 July Chris Smale entered the Sunday Social Competition with his wife Lail Emmerson-Smale with the hope of playing some good golf.

On their 17th hole of the day, the par 5 3rd hole, Chris hit a fantastic drive to the left-hand side of the fairway.  With 205 metres left for his second, Chris required a big draw shot to have any chance of hitting the putting surface in two.

Chris selected a 5 wood and hit a perfect 20 metre draw which he thought ended somewhere on the green. When the group arrived on the green they couldn’t see the ball so the first place they looked was in the hole.

An albatross 2 and from all records the first albatross registered in competition play in the golf club’s history.  Congratulations Chris on this fantastic achievement!

TIP FROM THE KITCHENJamie-leePimm’s and Strawberry Cobbler with Vanilla, Orange and Almond

Cobblers originated in the British and American colonies. English settlers were unable to make their beloved suet pudding due to lack of ingredients and cooking equipment so instead, covered stewed fruit with a layer of uncooked plain biscuits, creating a ‘cobbled’ effect. This version is perfect to celebrate beautiful local strawberries and soaked in classic Pimm’s, it will warm up your chilly winter evenings.

800g ripe strawberries
1 vanilla pod
1 orange
40g soft brown sugar
40ml Pimm’s
Vanilla ice cream, to serve
50g whole almonds
100g self-raising flour
50g caster sugar
100g unsalted butter, chilled
Preheat the oven to 240ºC.
Hull the strawberries, halve any larger ones and place them all in a 25cm baking dish.
Halve the vanilla pod lengthways, scrape out the seeds and add to the strawberries.
Finely grate in the orange zest and brown sugar, tossing gently to combine, then pour in the Pimm’s.
Place the dish in the oven, reduce the temperature to 190ºC and cook for 10 minutes or until the fruit is soft but still holding its shape.
Meanwhile, make the topping.
Blitz the almonds in a food processor until fine then tip in the flour, sugar and 1 pinch of sea salt.
Cut the butter into cubes, add to the food processor and pulse until the mixture resembles fine breadcrumbs.
Add about 2 tablespoons of water and pulse again until it comes together into a firm dough.
Remove the strawberries from the oven, gently mixing and scraping around the edges to collect any bits that are catching, then use a tablespoon to dollop 12 big spoons of dough on top of the fruit.
Return the dish to the oven for about 20 minutes until bubbling and golden on top.
Serve with vanilla ice cream.
